The retail space of Il Laboratorio del Gelato looks like an extension of the raw sidewalk outside.
Customers can buy the product and see the process taking stage in the back, the elevated production level. There, white walls and a grid of custom polycarbonate ceiling panels generate a clinical clean environment for the many stainless steel machines and the employees processing gelato in different stages.
